The decor is accented by an exclusive collection of artwork from renowned marine wildlife artist Guy Harvey. Guy is a unique blend of artist, scientist, diver, angler, conservationist and explorer, fiercely devoted to his family and the sea.
Seafood has always been one of man's favorite sources of nutrition, with many cultures becoming heavily dependent on fish in particular. The people of the Cayman Islands have a strong maritime culture, in which fish has been a staple food. Local catches of Wahoo, Tuna, Snapper and Dolphin fish (mahi) have provided fish lovers with a regular supply.

However because of the increasing demand worldwide, many popular species have been overexploited. As a conservationist, Guy has insisted that we do not serve patrons with Swordfish, Grouper, or any species of Billfish or Shark. (see a complete list here)
By not consuming these over fished species we are making an individual contribution to the long term improvement of these fish stocks.
